Directions

  • Boil water with a pinch of salt in a saucepan, then add sliced potatoes and simmer them over low heat for 15 minutes or until soft. Drain and rinse them with cold water. Set aside.
  • Cook bacon over medium-high heat for 2 minutes in a frying pan. Add olive oil, onion, and cooked potatoes and fry for about 10 minutes or until they are golden brown.
  • In the meantime, combine beaten eggs, milk, oregano, salt, and pepper in a bowl.
