Eating fresh shouldn't be difficult! Try these recipes that are full of fresh flavors thanks to Kroger.
1. Cauliflower Mushroom “Risotto”
INGREDIENTS:
2 Tbsp. olive oil
½ yellow onion, diced
1 containerKroger® Whole Baby Bella Mushrooms, sliced
16 oz.Kroger® Riced Cauliflower
1 tsp. garlic powder
1 tsp. salt
½ tsp. black pepper
½ cup vegetable stock
½ cup heavy cream
¼ cup grated Parmesan
DIRECTIONS:
Add olive oil to a large skillet over medium heat. Add onion and mushroom, and cook for 8 to 10 minutes. Add riced cauliflower, garlic powder, salt, pepper, and vegetable stock. Simmer for 5 to 6 minutes, until stock is reduced and cauliflower is tender.
Add heavy cream and Parmesan to the skillet. Cook 1 minute further, then serve topped with more Parmesan.
2. Crispy Sweet Potatoes with Lemon Mayo
INGREDIENTS:
2lbs. Sweet Potato, peeled and cut into 1” cubes
Kroger® Halved Brussels Sprouts
3 Tbsp. olive oil
1½ tsp. salt
½ tsp. black pepper
1 lemon, zested and juiced
⅓ cup Kroger® Classic Mayonnaise
¼ cup parsley, chopped
DIRECTIONS:
Preheat the oven to 400ºF. Line a baking sheet with aluminum foil and grease with nonstick cooking spray. Place cubed sweet potato and halved Brussels sprouts in a large bowl and toss with olive oil, salt, and pepper. Pour onto tray and roast for 25 to 35 minutes, until browned and crispy.
Make the lemon mayo: Stir together lemon zest, juice, and mayonnaise. Place lemon mayo in a small dip container and serve roasted sweet potatoes and Brussels sprouts around the dip container on a larger patter with a sprinkle of chopped parsley.
3. Avocado Toast Bar
INGREDIENTS:
Kroger® Hass Avocados, sliced
Cream cheese
Kroger® Grape Tomatoes, sliced in halves
Hard-boiled eggs
Smoked salmon
Kroger® Round Top Wheat Bread, toasted
Toppings:
Everything bagel seasoning, capers, red chili flakes
DIRECTIONS:
Arrange avocado, cream cheese, tomatoes, eggs, and salmon into serving bowls alongside pieces of toast. Allow everyone to mix and match their favorite foods atop their toast and garnish with various toppings.
4. Whipped Ricotta Toast with Adorbs Mandarins
INGREDIENTS:
2 slices thick brioche bread or similar
½ cup ricotta cheese
2Kroger® Adorbs Easy Peel Mandarins
Honey, for drizzling
Flaky salt, for topping
DIRECTIONS:
Toast brioche to your preference. Place ricotta cheese in food processor and blend until very creamy, 1–2 minutes. Spread on the toasted bread. Peel mandarins and place on top of the ricotta toasts. Drizzle with honey and top with a pinch of flaky salt. Serve immediately.
5. Caramelized Onion Yogurt Dip
INGREDIENTS:
2Kroger® Tearless and Sweet Onion
2 Tbsp. olive oil
1 tsp. salt
¾ tsp. black pepper
2½ cups Greek yogurt
¼ cup crispy fried onions
Wavy potato chips, for serving
DIRECTIONS:
Slice onions and add to a frying pan with 2 tablespoons olive oil. Season with salt and pepper, and cook over low-medium heat, stirring occasionally, for 15 to 20 minutes, until the onions are deeply browned.
Place onions in a food processor or blender with Greek yogurt. Blend until smooth. Pour into a bowl and top with crispy fried onions. Serve on a platter with wavy potato chips.
6. Garlicky Chicken Stir Fry
INGREDIENTS:
2 lbs. boneless chicken breasts, cut into 1” cubes
2 tsp. garlic powder
½ tsp. salt
2 Tbsp. olive oil
1 Kroger® Ginger Garlic Stir Fry Kit
3 cups cooked white or brown rice, for serving
DIRECTIONS:
Add cubed chicken breast to a prep bowl and season with garlic powder and salt. Place olive oil in a large wok. Add chicken over medium heat and cook until fully cooked through, 4 to 5 minutes. Remove and set aside on a plate.
Add more oil to the wok if needed. Add the contents of the stir fry kit, and cook according to package instructions. Add stir fry sauce to the wok along with chicken and cook 1 minute further, fully coating all of the ingredients. Serve the stir fry over rice.
7. Oven Roasted Kale & Green Beans
INGREDIENTS:
4 cups Kroger Chopped Kale
3 Tbsp. olive oil
2 cups Kroger® Green Beans
3 cloves garlic, sliced
2 tsp. salt
1 tsp. black pepper
½ lemon, juiced
DIRECTIONS:
Preheat the oven to 400º F. Line a baking sheet with aluminum foil and spray with nonstick cooking spray. In a large bowl, add chopped kale and a dash of the olive oil. Massage kale for 1 minute. Add green beans, garlic, salt, pepper, lemon juice, and remaining olive oil to the bowl. Mix to combine.
Pour the veggies onto the baking sheet and roast in the oven for 25 to 30 minutes, until the kale is tender and green beans are easily pierced with a fork.
