Kiwi is a seriously underrated fruit that isn't used in co*cktails nearly enough. This Kiwi Mint Tequila co*cktail is simple to make and packed with fruity flavor!

There's tequila when you're 21 and then there's tequila when you're 35. Totally different ball game, my friends. If you know what I mean.
I think that the older you get, the more you begin to realize that tequila can actually be enjoyed. In co*cktails. And on its own paired with food. And when you reach that point, tequila becomes a beautiful thing and not a vague terrible memory from a couple weekends ago.
I never thought I'd reach a point in my life where tequila co*cktails are some of my favorite co*cktails, but here we are. The liquor pairs well with so many ingredients, but until now, I've never tried pairing it with kiwi.
With their tropical fruity flavor, it almost feels like tequila was made for kiwi. Add in some summery mint and a little lime juice and this Kiwi Mint Tequila co*cktail will become your new drink of the season.
Kiwi Mint Tequila co*cktail Recipe
As most of my co*cktails are, this is as easy as can be. Put peeled and roughly chopped kiwis, mint, lime juice, and agave or honey in a blender.
And blend until a nice smooth puree is formed. It will kind of look like a green smoothie... But obviously this mixture is so much better!
In a co*cktail shaker filled with ice, add 4 oz. tequila and kiwi mixture.
Shake well and pour into a glass filled with ice. Top off with soda water. And a kiwi slice garnish for fun.
A lot of people have a dislike for tequila because they remember their college days of drinking too much of it and drinking not so high quality tequila. Understandable. Totally understandable. But it's time to change your mindset.
And this kiwi mint tequila co*cktail is the perfect way to do so. It's the perfect balance of fruitiness and liquor. Tequila lovers and tequila skeptics alike will enjoy this one.
And kiwi lovers! Why is kiwi so underrated? I love eating it (with a spoon or sliced!), but think I may enjoy it in kiwi co*cktail form even more.
While I certainly wouldn't describe myself as an expert, I am pleased to say my palate is at a point where I really can tell good tequila from a not so good tequila from a GREAT tequila. And I'm way, way more picky than I ever was.
As you can tell, that definitely doesn't mean I'm opposed to enjoying it in fruity co*cktail form. Especially if that fruit is all natural.
In addition to encouraging everyone to enjoy more tequila, I'm hereby starting a petition to encourage more people to eat kiwi. Or drink it in kiwi co*cktails as the case may be.

Ingredients
- 5 kiwis, peeled and roughly chopped (plus one for garnish)
- 8 mint leaves
- 1 ½ Tbsp freshly squeezed lime juice
- 1 Tbsp honey or agave
- 4 oz. blanco tequila
- Soda water, for topping
Instructions
Put the kiwis, mint, lime juice, and agave or honey in a blender. Blend until a nice smooth puree is formed.

That's a lot of tequila and I can totally get behind that. I'd love to try the anejo because it looks dark and full bodied and delicious. I'm sure ill have a margarita or two tomorrow!

I want to try them all! Though I'd be most excited to try the reposado and anejo, since I've never sampled either genre before. I've recently learned more about how tequila is made and I am amazed the agave plants grow for at least 7 years before being harvested! So crazy! I also love your co*cktails recipes - they're always delicious and fun! Enjoy Vegas!
