Note: I boiled the orzo with more water than needed this is because the starchy water helps create an extra creamy texture when the Boursin is added without it drying out.

Ingredients

Orzo: this is a small, rice-shaped pasta that is used for soups and other dishes.

Boursin cheese: this creamy spreadable French garlic and herb cheese. It is the star of today's recipe and it adds a lot of flavor to the dish.

Unsalted butter: substitute with salted butter and adjust the overall seasoning accordingly.

Spinach: adding greens helps make this a more complete and nutritious meal.

Chicken stock: substitute with vegetable stock to make this recipe vegetarian.

Salt and black pepper to taste

How to make Boursin orzo

In a large skillet, add butter and melt on medium heat.

Add dried orzo to the melted butter, stir and toast for about 1-2 minutes.

Stir in chicken stock over the toasted orzo, season with salt and black pepper if using, and bring to a boil until the orzo is al dente.

Add Boursin cheese to the cooked orzo and stir until well incorporated and creamy. You can add water at this point if need be.

Finally, add some baby spinach and let it wilt as you stir. Once everything is mixed together, test the seasoning to make sure it's perfect!

How to store and reheat

While I like to serve this Boursin orzo on the day that it is made, it does also make a great leftover and so can be made ahead of time. Store in the fridge in an airtight container for up to 3 days, nothing longer than stated.

To reheat, add a splash of water or milk and warm it up in a saucepan on medium-low heat, stirring occasionally until it is warmed throughout. Alternatively, warm in a microwave at 1-minute intervals until warm through to your liking making sure to stir in between intervals.

Tips

  • Keep an orzo while it is boiling making sure to stir in occasionally so that it doesn’t stick together or to the bottom of the pan.
  • Swap orzo pasta for any other pasta of choice
  • If you don't have Boursin cheese, simply replace it with cream cheese, loads of garlic, and herbs of choice.
  • If it looks like the pasta is dry after cooking, add a splash of warm water, stock, or milk, and stir on low heat until creamy and desired consistency is achieved.
