You’re going to just LOVE how easy this roasted red cabbage is to make. With just a few ingredients (literally, cabbage, garlic, oil, salt and herbs), you get the most flavorful, vibrant, and sweet yet peppery vegetable side dish that’s nutrient packed as well.

Yep,red cabbage(or purple cabbage) is packed with Vitamins A, C, and K, and may even help with bone health.

Plus, it’s just downright delicious. You can serve these as red cabbage steaks, or shred them even more for a roasted red cabbage side dish. Honestly, you can even serve this roasted red cabbage on its own- it’s that delicious!

Key Ingredients:

  • Red cabbage
  • Garlic
  • Vegan butter:Because we’re using high heat to roast our red cabbage, it’s best to cook your red cabbage in an oil that won’t break down. Olive oil doesn’t do well withhigh heat cooking, whereas vegan butter does (because it contains coconut oil!). You can use coconut oil or avocado oil if you prefer.
  • Sea salt
  • Herbs:I like to use fresh herbs, like parsley and dill. You can switch it up, though, and add in basil, or rosemary and thyme for the winter months.

Flavor Options:

Want to jazz up your roasted red cabbage? Here are a few of my favorite seasonings to swap in, along with the cooking oil and sea salt:

  • Ginger soy:2 tbsp soy sauce or Tamari + 1 tbsp dijon mustard +1 tsp ground ginger + 1/2 tsp garlic powder
  • Curry:1 tbsp curry blend, such as by Simply Organics
  • BBQ:1 tsp cumin + 1 tsp smoked paprika + 1 tsp garlic powder + 1 tsp chili powder (bonus– drizzle some homemade 5 minute vegan BBQ sauce on top!)
  • Herbed Lemon:2-3 tbsp lemon juice + 1 tbsp Italian herb blend

Can you cook red cabbage the same as regular cabbage?

Yes, absolutely! Red cabbage is a bit sturdier than green cabbage, so I find it’s actually easier to make red cabbage steaks with them. But you can apply this recipe to regular green cabbage as well if that’s what’s local to you!

What to serve with roasted cabbage steaks?

Personally, these roasted red cabbage steaks are lovely even as a main dish. I top mine with this vegan yogurt dill sauce and some chickpeas for a complete meal. They’re delicious!

You can also drizzle on some homemade vegan pesto or this yummy vegan queso dip as well.

I sometimes serve my creamy garlicky tomato butter beans over these for a full meal!

If you’re looking to keep this roasted red cabbage as a side dish, they work really well with homemade vegan falafel or vegan scallops too! Be sure to add a side of roasted Brussels sprouts and roasted sweet potatoes as well 😉 I also love it as a side with my vegan chickpea tuna or this baked crispy tofu recipe!

Description

This roasted red cabbage recipe is super easy, garlicky and tangy, and vibrantly delicious! Perfectly crispy with tender centers, and a creamy yogurt dill sauce to top!

Ingredients

  • 1 whole red cabbage
  • 2 tbsp vegan butter, melted
  • 3 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped dill
  • Sea salt & black pepper to taste

Instructions

  1. Prep:Preheat the oven to 425F, and line a baking sheet with parchment paper. Wash the red cabbage, and peel off any bad or worn leaves.
  2. Slice:Slice the red cabbage in half. Then take one of the halves and slice it lengthwise to form a red cabbage steak. You should be able to get 3 slices out of one half. Repeat for the other half. (See blog post photos for reference). Place the red cabbage steaks onto the baking sheet.
  3. Season:Brush the melted vegan butter on top of the red cabbage steaks. Then sprinkle on top the minced garlic, parsley, dill, sea salt and pepper evenly.
  4. Roast:Place the baking sheet into the oven to roast for 30-40 minutes. The edges of the roasted red cabbage will be crisp.
  5. Serve and enjoy!Serve your roasted red cabbage warm with yogurt dill sauce or as is along with your main. Enjoy!

Notes

Vegan butter:You can also use avocado oil or coconut oil. Use olive oil only as a finishing oil.
